Cheesy Meatloaf

What could be more American than meatloaf???
That means even more than usual to me lately, when I'm having weird cravings for completely normal stuff, that isn't so normal when I'm spending some time so far from home! This is some really good stuff, and super easy to make with a mixer. See, the mixer makes it so I can eliminate the part I hate about meatloaf - touching the gooey meat!
2 lbs ground beef or ground chuck or ground turkey
1 envelope dry onion soup mix (I prefer Lipton Onion Soup mix)
3/4 cup oats
2 eggs
3/4 cup water
1/3 cup ketchup
2 cups shredded cheese

Preheat 350 degrees.
1. Combine meat, soup mix, oats, eggs, water, and ketchup with large mixer on low.
2. Slowly add cheese until well-blended.
3. Shape into mini-loaves.
4. Bake for 45 minutes.
4. Add ketchup and sprinkle more cheese on top of loaf, if desired.
6. Cook 10 more minutes.
7. Let set 10 minutes before slicing.


When I make this recipe, I usually just make a half recipe. For the the hubby and I, I can make three mini-loaves out of one pound of ground meat and half of the other ingredients (except the envelope of soup mix, which is too much of a hassle to halve, and the cheese, cuz you can never have too much cheese!).
